Traditional Balsamic Vinegar of Modena PDO

It is the most famous and most precious vinegar one can fi nd, the must obtained from grapes subject to statutory regulations is boiled over a naked fl ame in an open container: the best known and most widely used grapes are those of trebbiano and lambrusco. afterwards, the vinegar is aged and matured in special wooden barrels, and by means of annual decanting and topping up, it assumes a body and fl avour unique of its kind.

TYPICAL CHARACTERISTICS OF TRADITIONAL BALSAMIC VINEGAR OF MODENA P.D.O.:
Colour: dark brown but full of warm light.
Dense: with a fl uid and syrupilke consistency..
Fragrance: distined, complex, sharp and unmistakeably but pleasantly acid.
