{"id":498,"date":"2023-05-02T18:40:40","date_gmt":"2023-05-02T16:40:40","guid":{"rendered":"https:\/\/www.acetaiacavedoni.it\/?page_id=498"},"modified":"2023-06-09T15:50:03","modified_gmt":"2023-06-09T13:50:03","slug":"history","status":"publish","type":"page","link":"https:\/\/www.acetaiacavedoni.it\/en\/history\/","title":{"rendered":"History"},"content":{"rendered":"<div class=\"wpb-content-wrapper\"><p>[vc_row][vc_column]<h1 class=\"deco-title sinistra \">History of the Cavedoni family<\/h1>[\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text]The name <b>Cavedoni<\/b> means love and tradition in producing the vinegar of Modena, &#8220;<strong>Traditional Balsamic Vinegar of Modena DOP, and Balsamic Vinegar of Modena IGP<\/strong>&#8220;, according to artisanal techniques handed down from generation to generation, since <strong>1860<\/strong>.<\/p>\n<p>A love that speaks of respect for secular traditions, the alchemy of time and the foresight of a man who already in 1950 boasted a collection of over 500 barrels of vinegar: <strong>Francesco Cavedoni Senior<\/strong>.[\/vc_column_text][\/vc_column][\/vc_row][vc_row content_placement=&#8221;middle&#8221;][vc_column width=&#8221;1\/6&#8243;]<div class=\"image-wrapper \">\n\t\t\t\t<figure class=\"aspect-image\" style=\"background-image:url('https:\/\/www.acetaiacavedoni.it\/wp-content\/uploads\/2023\/05\/antenati-cavedoni-1.jpg'); aspect-ratio:207 \/ 270;\" >\n\t\t\t\t\t\n\t\t\t\t\t\n\t\t\t\t<\/figure>\n\t\t\t<\/div>[\/vc_column][vc_column width=&#8221;5\/6&#8243;][vc_column_text]The custom of our lands to give their children a <strong>vinegar battery<\/strong> as <strong>marriage<\/strong> dowry has meant that we go back to the distant 1835 with the birth of <strong>Morandi Francesco<\/strong>; man handyman (carpenter, seller of wood, repairman of shoes&#8230;) and naturally tied to the ancient traditions to prepare in its attic a battery of vinegar.[\/vc_column_text][\/vc_column][\/vc_row][vc_row content_placement=&#8221;middle&#8221;][vc_column width=&#8221;5\/6&#8243;][vc_column_text]With the birth of his son <strong>Morandi Giuseppe<\/strong> in May 1860 continues the Morandi dynasty and the tradition of expanding the acetaia and &#8220;dwelling&#8221; several barrels of vinegar; probably helped by the fact that he practiced the profession of <strong>builder<\/strong> and therefore from a decent well-being and driven by the need to prepare several gifts since he had <strong>three daughters<\/strong>.[\/vc_column_text][\/vc_column][vc_column width=&#8221;1\/6&#8243;]<div class=\"image-wrapper \">\n\t\t\t\t<figure class=\"aspect-image\" style=\"background-image:url('https:\/\/www.acetaiacavedoni.it\/wp-content\/uploads\/2023\/05\/antenati-cavedoni-2.jpg'); aspect-ratio:207 \/ 270;\" >\n\t\t\t\t\t\n\t\t\t\t\t\n\t\t\t\t<\/figure>\n\t\t\t<\/div>[\/vc_column][\/vc_row][vc_row content_placement=&#8221;middle&#8221;][vc_column width=&#8221;1\/6&#8243;]<div class=\"image-wrapper \">\n\t\t\t\t<figure class=\"aspect-image\" style=\"background-image:url('https:\/\/www.acetaiacavedoni.it\/wp-content\/uploads\/2023\/05\/antenati-cavedoni-4.jpg'); aspect-ratio:207 \/ 270;\" >\n\t\t\t\t\t\n\t\t\t\t\t\n\t\t\t\t<\/figure>\n\t\t\t<\/div>[\/vc_column][vc_column width=&#8221;5\/6&#8243;][vc_column_text]The smallest of which was called <strong>Morandi Zaira<\/strong> born in 1894 , housewife, who knew as a child a worker who was a laborer in his father\u2019s yard: <strong>Cavedoni Dante<\/strong> (born in 1893). The spark that made their life a happy and consolidated union by the birth of three children one of whom, <strong>Cavedoni Francesco<\/strong> (1926) was the one who loved and understood <strong>natural<\/strong> balsamic vinegar more than any other (at that time the traditional was called that).[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text]A life dedicated to the expansion and housing of different batteries and to the teaching of those who wanted information on the preparation of vinegar or the start of a battery. From the union with <strong>Codeluppi Orietta<\/strong> were born <strong>Cavedoni Dante<\/strong> (1952) and <strong>Cavedoni Paolo<\/strong> (1956).[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column width=&#8221;1\/3&#8243;][\/vc_column][vc_column width=&#8221;1\/3&#8243;]<div class=\"image-wrapper \">\n\t\t\t\t<figure class=\"aspect-image\" style=\"background-image:url('https:\/\/www.acetaiacavedoni.it\/wp-content\/uploads\/2023\/05\/codeluppi-orietta-cavedoni-francesco.png'); aspect-ratio:302 \/ 207;\" >\n\t\t\t\t\t\n\t\t\t\t\t\n\t\t\t\t<\/figure>\n\t\t\t<\/div>[\/vc_column][vc_column width=&#8221;1\/3&#8243;][\/vc_column][\/vc_row][vc_row content_placement=&#8221;middle&#8221;][vc_column width=&#8221;5\/6&#8243;][vc_column_text]The <strong>brothers<\/strong> Dante and Paolo contributed together with their father to the maintenance of the acetaia family that had taken on considerable proportions with decanting, rinsing, boiling of musts, choice of grapes until July 1998 year of death of Cavedoni Francesco.[\/vc_column_text][\/vc_column][vc_column width=&#8221;1\/6&#8243;]<div class=\"image-wrapper \">\n\t\t\t\t<figure class=\"aspect-image\" style=\"background-image:url('https:\/\/www.acetaiacavedoni.it\/wp-content\/uploads\/2023\/05\/cavedoni-paolo.png'); aspect-ratio:207 \/ 270;\" >\n\t\t\t\t\t\n\t\t\t\t\t\n\t\t\t\t<\/figure>\n\t\t\t<\/div>[\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text]From the union between Cavedoni Paolo and Pini Vanna <strong>Cavedoni Francesco Jr<\/strong>. (1984) and <strong>Cavedoni Marcello<\/strong> (1988) future champions of one of the rarest and noblest products of our land.
