{"id":500,"date":"2023-05-02T18:39:46","date_gmt":"2023-05-02T16:39:46","guid":{"rendered":"https:\/\/www.acetaiacavedoni.it\/?page_id=500"},"modified":"2025-10-09T12:36:10","modified_gmt":"2025-10-09T10:36:10","slug":"tasting-visit","status":"publish","type":"page","link":"https:\/\/www.acetaiacavedoni.it\/en\/tasting-visit\/","title":{"rendered":"Tasting visit"},"content":{"rendered":"<div class=\"wpb-content-wrapper\"><p>[vc_row][vc_column]<h2 class=\"deco-title sinistra \">Visit to one of the oldest vinegar houses in the Modena area: Cavedoni since 1860<\/h2>[\/vc_column][\/vc_row][vc_row content_placement=&#8221;middle&#8221;][vc_column width=&#8221;2\/3&#8243;][vc_column_text el_class=&#8221;text-justify&#8221;]<\/p>\n<h3><strong>Tasting visit<\/strong><\/h3>\n<p>In the new headquarters in Via Guerro di Qua Nr 2 in Castelvetro di Modena was born the farm where, in the vineyards owned, is produced <strong>Lambrusco Grasparossa di Castelvetro DOP<\/strong> and <strong>Uva Trebbiano Modenese<\/strong>.<\/p>\n<p>Two of the seven types of grapes suitable for the production of <strong>Aceto Balsamico Tradizionale Di Modena DOP<\/strong> and <strong>Aceto Balsamico di Modena IGP<\/strong>.<\/p>\n<p>The visit begins from here, a tour <strong>in the vineyards<\/strong> to learn about the grapes and all the various stages of processing, such as mowing the grass, hoeing the soil, pruning and harvesting made by hand.<\/p>\n<p>The grapes are collected in boxes of 20 kg each, which are made directly by the owners Paolo and Marcello Cavedoni. aspect-ratio:16 \/ 9;\" >\n\t\t\t\t\t\n\t\t\t\t\t\n\t\t\t\t<\/figure>\n\t\t\t<\/div>[\/vc_column][\/vc_row][vc_row][vc_column][vc_column_text el_class=&#8221;text-justify&#8221;]Then you enter the <strong>Vinegar Cellar<\/strong>, where among hundreds of barrels of different woods and sizes begins the aging of Balsamic Vinegar.<\/p>\n<p>All the <strong>stages of transformation<\/strong> of the product will be explained, starting from the cooked grape must, the only ingredient of the Traditional Balsamic Vinegar of Modena DOP.<\/p>\n<p>In these environments the DOP and IGP Balsamic Vinegars begin to age naturally, with the mere passing of time the chemical-physical transformation begins which transforms the sugars of the grapes into alcohol and subsequently into acetic acid, finally the heat of the summer of the years to come creates a process of <strong>evaporation of the water<\/strong> contained in the must making it dense and finally the wooden barrels transform the light brown product into the characteristic black or better to say dark brown typical of Balsamic Vinegar.<\/p>\n<p>The <strong>two Vinegar cellars<\/strong> of <strong>Traditional Balsamic Vinegar of Modena PDO<\/strong> and <strong>Balsamic Vinegar of Modena IGP<\/strong> will be shown, explaining the differences in production in detail.[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column width=&#8221;1\/3&#8243;]<div class=\"image-wrapper \">\n\t\t\t\t<figure class=\"aspect-image\" style=\"background-image:url('https:\/\/www.acetaiacavedoni.it\/wp-content\/uploads\/2023\/06\/cavedoni_azienda_001.jpg');
