Paolo Cavedoni

Paolo Cavedoni was born on 02/06/1956 in Castelvetro, where since his childhood, emulating his father Francesco, he developed a deep passion for "natural" balsamic vinegar of Modena, as Traditional Balsamic Vinegar of Modena PDO was called at that time.

During the years 1973 to 1976 he took multiple degrees at Istituto d'arte of Valenza Po', Piedmont, as master goldsmith and gemologist.

A few years later, he and his brother Dante opened a jewellery store in Modena, but nonetheless he continued to follow his father's teachings.

Afterwards, he started marketing Traditional Balsamic Vinegar of Modena PDO and established his own company, Antica Acetaia Cavedoni, to make this highly exclusive product known worldwide.

In 2010 he decided to invest in his company's future and bought an estate which is one of the most beautiful and renowned in Castelvetro, called Fondo San Lorenzo and located a few kilometers from Castelvetro centre in a valley surrounded by hills covered with vineyards.

With the assistance of his son Marcello he devotes himself completely to farming, vineyard care and maintenance and production of Traditional Balsamic Vinegar of Modena PDO and Balsamic vinegar of Modena IGP.
