It is the most famous and valuable vinegar you can find. It is obtained by cooking the must of the grapes authorized by the disciplinary: the most known are the trebbiano and the lambrusco.
Subsequently, the vinegar is aged and matured in small barrels of precious woods, and with the technique of racking and topping, assumes a body and a unique flavor.
