From the typical vines of the Modena area are not only obtained the Lambrusco wine and the famous balsamic vinegar but also another characteristic product of the local peasant gastronomy, the saba.
It is a speciality of ancient origin. Saba is obtained by a careful cooking of the pressing of grapes that lasts many hours, until a remarkable concentration of the must has not occurred. It is therefore a thick and sweet syrup. During its preparation the saba is enriched by the addition of quince (apples or pears) and flavored with spices such as cinnamon and cloves.
The imagination of the lovers of a rich cuisine of a long past and open to new and appetizing combinations can therefore only be stimulated by a product like the saba Cavedoni, genuine, of great quality and fruit of love, knowledge and respect of ancient local and family customs.
